What's inside — and why an EHO cares

Every UK food business must run a food safety management system based on HACCP principles and keep records that prove it. Those records influence confidence in management, one of the three areas covered in our guide to food hygiene ratings explained.

The records inspectors ask for first

Opening and closing checks. Fridge and freezer temperatures, with safe ranges printed on the page. Hot-holding and cooking temperatures. Delivery acceptance. A weekly cleaning schedule, and a corrective-action log for anything out of range. The template covers all of them — each page is a day, fill it in at the pass, file it by week.

Frequently asked questions

Will this help my hygiene rating for Just Eat or Deliveroo?

Indirectly, yes. Delivery platforms require a minimum food hygiene rating, and complete daily records are a big part of the "confidence in management" score an EHO gives. The sheets here are those records; our guide to food hygiene ratings explains how the score is built.

What temperatures matter most in a takeaway?

Hot holding at 63°C or above, reheating to 82°C in Scotland (75°C elsewhere in the UK), fridges below 5°C. The quick reference card in the pack has the full list to pin by the fryer, and the weekly log gives you a place to record them; street food traders use the same sheets.
