UK requirements

Food safety management and allergens.

These entries describe official guidance. They are not claims that Blueroll alone creates compliance.

HACCP basis

UK food businesses need a written food safety management system based on HACCP principles.

GOV.UK says the system must be based on HACCP principles and that records are required as evidence of the system. A business may use a pack such as Safer Food, Better Business where appropriate.

Business duty

Food businesses must make and follow a food safety management plan.

GOV.UK's hygiene guidance describes this as a core responsibility and notes enforcement outcomes can include a lower rating, closure or prosecution. Exact duties depend on the business and jurisdiction.

14 allergens

UK food information rules specify 14 allergens that must be declared when used as ingredients.

The FSA list includes celery, cereals containing gluten, crustaceans, eggs, fish, lupin, milk, molluscs, mustard, nuts, peanuts, sesame, soya and sulphur dioxide/sulphites above the stated threshold.
