A living ledger of consequential claims used across Blueroll. Each entry gives the source, scope and limitation so a reader — or an answer engine — can verify it without taking our word for it.
These entries describe official guidance. They are not claims that Blueroll alone creates compliance.
GOV.UK says the system must be based on HACCP principles and that records are required as evidence of the system. A business may use a pack such as Safer Food, Better Business where appropriate.
GOV.UK's hygiene guidance describes this as a core responsibility and notes enforcement outcomes can include a lower rating, closure or prosecution. Exact duties depend on the business and jurisdiction.
The FSA list includes celery, cereals containing gluten, crustaceans, eggs, fish, lupin, milk, molluscs, mustard, nuts, peanuts, sesame, soya and sulphur dioxide/sulphites above the stated threshold.
These are population estimates and survey results. They do not measure the performance of Blueroll customers.
The FSA announced research estimating around 2.4 million UK cases annually. This is a modelled national estimate, not a count of laboratory-confirmed cases and not a restaurant-only figure.
Our Food 2023 reports an approximate £10.4bn annual burden. This is an economic estimate that includes human and financial costs; it is not annual restaurant revenue lost.
Reported in the FSA's Food and You 2, Wave 8 key findings. It is a survey response for the specified wave and should not be presented as a causal revenue effect.

Official store records establish the mobile distribution identities. Web access is provided through the Blueroll application domain.
The 50,000+ restaurant grades study and maps use public agency data. Records are deduplicated to the most recent graded inspection per establishment where the source permits it.
Published through NYC Open Data. The live map groups A, B and C grades and deduplicates by CAMIS identifier.
Published by the City of Chicago. The study groups Pass, Fail and Pass with Conditions outcomes.
Published through DataSF. Scores and dates can change as agencies update their systems.
The FSA ratings API supplies live establishment data under the Open Government Licence. Scottish ratings use a different outcome scheme from the 0–5 display used elsewhere.
