Eight violations, two of them critical.
This is the New York outpost of Wolfgang Puck — the celebrity chef behind the Oscars and Emmy after-parties. Steaks at Cut start at $100. The restaurant is on every "best of NYC" steakhouse list.
On February 19, 2026, the NYC Department of Health published its inspection report. Eight violations were flagged. Two of them were classified as critical:
- Filth flies in food preparation areas.
- Cold food held above 41°F — temperature abuse, the bacterial growth zone.
- Harbourage conditions for rodents and other pests.
- Anti-siphonage / back-flow prevention device deficient.
- Dishwashing and ware-washing sanitation deficient.
- No "wash hands" sign at handwash sink.
- Accurate thermometer not provided in cold storage.
On April 1, 2026 — six weeks later — inspectors returned. They found one more violation: "Current letter grade or Grade Pending card not posted." Under NYC Health Code, every restaurant must display its grade in the window. Cut by Wolfgang Puck did not.
